Bi Bi Tri Hards

I like to follow the crazy stunts of our boys Hamish and Andy and I was particularly impressed with the latest madness of their Bi Bi Tri Bi-athalon. Who else would be so unashamedly average at 24 different sports whilst wearing a number of undersized lycra uniforms that showed up their varying inadequacies?

They would!

For that I congratulate them. Boys, you deserve a beer or two and I have noted the perfect accompaniment below.

Baked Feta (Serves 4)

Ingredients
250g Feta
1 tomato seeded and diced
½ red chilli sliced
Leaves from 3 sprigs thyme, plus extra to garnish
1 cove garlic
1 tbsp olive oil

Method
Preheat oven to 180C. Place feta in an ovenproof dish or in tin foil. Place remaining ingredients in a small bowl and toss to combine. Pour over the feta, cover with foil and bake for 20 minutes. Garnish with fresh thyme and serve hot with crusty bread as the perfect snack with drinks.
