Kevin Crumbles

Kevin 07 has gone to heaven but we will know where to find him. In a back bench somewhere weeping over his first term ousting.

So who thinks Julia did the right thing by the Labour party and our country and who thinks she is a sneaky, backstabbing, feisty red head??

I love the fact we have our first female Prime Minister but I will be happier still when she is fairly elected by the good people of Australia. You have to admit men are from mars and women are from Venus so things are certainly going to change in the world of politics. For the time being anyway!

This crumble is for you Kevin.

Apple and Berry Wholemeal Crumble (serves 6)

The addition of oats, nuts, seeds and the wholemeal flour add a little extra health to this classic winter dessert. Great for the whole family from toddlers to oldies!

Crumble Ingredients
1 cup wholemeal plain flour
1 tsp baking powder
180g butter room temp
1/2 cup rolled oats
1/3 cup sun flower seeds
½ cup almonds coarsely ground
½ tsp vanilla extract
½ cup brown sugar firmly packed
1 tsp cinnamon
Poached Fruit Ingredients
6 large Grannysmith apples peeled, cored and sliced into 10 wedges each
2 tbsp raw sugar
1/3 cup water
2 cups frozen berries

Method Poached Fruit
Place the apples and water into a saucepan over medium heat and bring to a low simmer. Sprinkle with the raw sugar and cook for about ten minutes, with the lid on, or until the apples have begun to soften. They should remain in their wedge shape. Tip out any excess water and stir through the berries. Lay the apple and berry mix into a baking dish keeping the mix about 4cm deep.

Method Crumble

Preheat the oven to 180C. Place the flour and baking powder into a bowl and mix to combine. Add the butter and gently work into the flour using your fingertips. Add all remaining ingredients and toss gently to combine. Lay the crumble evenly over the apple mix. Bake for 30-40 minutes until the top is lightly browned and crisp. Serve hot with custard or double cream.
