Princess Mary Bakes a Pair
Princess Mary of Denmark has jetted into Australia to catch up with family and friends and share the joyous news of her impending royal pair. Arriving from Europe looking glowingly healthy and fabulously fashionable she makes twin pregnancy look glamorous. As a mother of twins I can tell you that in the latter stages of her pregnancy the only thing she will fit into are her husband’s tracksuit pants and a two seater couch. No doubt our Mary will even manage to make that look stylish!
Time away from her husband, children and royal duties is just what Princess Mary deserves as she enjoys the relaxed pace of Tasmania and 40th Birthday celebrations with friends in Adelaide.
Enjoy it while you can PM because, although two heads are better than one, infant twins present a special challenge. A challenge I can personally recommend! Enjoy this pair (sorry pear) and almond sponge.
Pear Madeira Cake Ingredients
Cake
220g unsalted butter - softened
1 cup caster sugar
1 ½ tsp vanilla extract
4 free range eggs
1 ¼ cup plain flour
1 tsp baking powder
1 cup almond meal
Top
1 ½ pears, peeled and flesh cut from the core
2 tbsp caster sugar
½ tsp vanilla extract
Method
In a large bowl beat butter, sugar and vanilla until light and fluffy. Add eggs one at a time beating each one in before adding the next. Sift flour, almond and baking powder over the mixture and gently fold in. Pour into a lined loaf tin 23cm x 13.5 cm and flatten evenly in the tin to create a smooth top. Cut the pear flesh into even slices and layer along the top of the cake. Mix the caster sugar and vanilla before sprinkling it evenly over the pear. Bake at 170C for 50 minutes or until a skewer comes out of the centre clean. Cool in the tin for 5 minutes before turning out to cool on a wire rack.
